Make this Baking Mix one day and Eat Breakfast for 5 days!
If you are still stuck at home and starting to Homeschool your kids for the rest of the school year, you are not alone. The first week it was easy to lean on a cold breakfast choice like cereal, but now you start to notice that cereal, is not enough and that 30 minutes later kids are still hungry, opening the fridge wondering what else to eat, or leaving the pantry door open just to see if there is a snack buried under the pile of dry goods you brought home last time you went to the store.
Easy breakfast choices are not available, the shelves are emptying and now you wonder...what am I going to feed these kids so they have a full tummy until lunch time?
Well, you can make this Baking Mix on Sunday and feed the kiddos all week, not the same breakfast, but different things, being stuck inside is boring enough, we don't need food to be boring too!
Ingredients:
9 Cups of Flour = 0.99 cents
2/3 of a Cup of Dry Milk = $2.38
3 Tablespoons of Baking Powder = 0.39 cents
1 Cup of Shortening = $1.13
1 Tablespoon of Salt don't we all have salt? It was such a tiny number!
To make this Baking Mix I put all the ingredients in the Food Processor until everything is well mixed.
Then I put it in an airtight container (remember this has baking powder and needs to be in a closed
container to work, otherwise it wont rise).
If you don't have a food processor you need one (trust me, specially if you want to start to cook from scratch) , mine kneads all my doughs, chops all my veggies and even makes my "not so great cuts of meat" into ground beef. I will suggest this one KitchenAid 7 Cup Food Processor it is under $100 and is very "quiet" compared to the cheaper versions.
If you don't have a food processor, don't worry you can do it with patience and a fork, or even a blender. Just think "outside the box" and ideas will start to flow.
The total for this Baking Mix is $ $4.89 ( This is according to the prices I found and bought at Target find the links to prices when you click on each ingredient, also remember we don't use the entire content of each so I had to divide it into the measurements).
In the following recipes, there will be extra ingredients that will add to the $6 or so ( based on the prices of my Target Grocery order). These ingredients are the ones I keep on hand all the time, nothing fancy around here so, let's get started.
WARNING: If you are worried about sugar, please don't be, unless you or your child have some kind of dietary restriction this is the time we need to focus on "surviving" and use what we have at home, make substitutions and most importantly understand how important it is what we are able to stay with our kids in this hard times, some people are not as lucky as we are, they are fighting an illness in a hospital, alone, away from their kids, and dealing the best they can.
We are ok, eating sugar or carbs for a couple more weeks is ok as long as we keep the portions small. Just don't go overboard.
Breakfast Idea #1 Pancakes
Pancakes are a crowd pleaser, you can make them into fun shapes, add unlimited amount of toppings, healthy options or otherwise, but just keep in mind, you can add a cup of milk for calcium, some canned peaches, a granola bar, or simply some raisins.
Let's build some memories with our loved ones today, despite of the crazy world we are living in.
2 1/4 Cups of Baking Mix
1/4 Cup of Sugar
1 Egg
1 1/2 Cups of Water
2 Tbsp Vegetable Oil
1-Dump all the ingredients in a mixing bowl and mix well.
The batter
should be thick looking and lumpy.
2-Cook on a frying pan, or hot greased griddle. Flip when bubbles break on the surface and the edges begin to dry.
Makes 12- 15 Pancakes (depending on the size you make them of course)
You can add chocolate chips to the batter as it cooks in the griddle, you can also use your favorite Mickey Mouse or any other pancake shaping device, by setting it in the griddle before you pour the batter.
Breakfast Idea #2: Biscuits
Biscuits are delicious by themselves, you can use them as a sandwich and add lunchmeat and cheese.
You can also add some bacon and eggs with a little bit of cheese, around here we love them with gravy and some scrambled eggs.
Ingredients
2 1/4 Cups Baking Mix
2/3 Cups of Water
Put the ingredients in a bowl and mix lightly.
Knead 15 times or so.
Roll dough about 1/2 inch thick and cut with a 2 inch cutter
Bake at 450 for 10-12 minutes on a cookie sheet
If you want to make them "cheesy" just add 1/4 cup of Cheddar Cheese to the dough.
Breakfast Idea #3 Muffins
Some hot chocolate, cold milk or simply tea are the best companions for these delicious muffins, they are filling and you can easily replace the regular flour for whole grain.
You can also add nuts, dry fruits or chocolate chips, they are my kids' favorite muffins.
Ingredients
2 1/4 Cup Baking Mix
1/4 Cup of Sugar
1 Egg
3/4 Cup Water
1/3 Cup Vegetable Oil
Mix the first ingredients, then add egg, water and vegetable oil.
Mix only enough to make sure the flour is moist (it's supposed to look lumpy)
Add the batter to the muffin tins, but only 2/3 full.
Bake at 400 degrees for 20 minutes.
#4 Breakfast Puffs
2 Cups Baking Mix
1/4 Cup Sugar
1/4 tsp Nutmeg
2 Tbsp of Butter or Margarine
1/2 Cup Milk
1 Egg
Topping
2/3 Cup Sugar
1 tsp Ground Cinnamon
1/2 Cup Butter or Margarine melted
Preheat Oven at 400 degrees.
Grease Muffin Cups (24 mini muffin cups )
Mix Baking Mix + Sugar + Nutmeg + Margarine + Milk + Egg beat for 30 seconds.
Fill Muffin Tins 2/3 full
Bake 10 minutes
Mix Cinnamon and Sugar in a bowl
Quickly roll the puffs in melted margarine, then in the cinnamon sugar mixture.
Makes 24 puffs.
Breakfast idea # 5 Butterfly Ring| This is a "Coffee Cake" style, but with a delicious filling.
Ingredients
2 1/2 Cups of Baking Mix
1 Tbsp Sugar
1 Egg beaten
2/3 Cup of Milk
Serves 12
Preheat the oven at 375 degrees
Grease a Jellyroll Sheet
Mix the Ingredients until everything is well blended ( it should be a sticky dough)
Knead over a floured surface about 20 times)
Roll out into an 11X14 inch rectangle.
Filling
2 Tbsp Butter Melted
1/2 Cup Sugar
3/4 Cup of Nuts
1/4 Cup Jelly
1/4 tsp Cinnamon
1 Tbsp Flour
Add all the filling ingredients to the melted butter, blend until smooth. ( If Jelly is hard, put it in the microwave for a few seconds)
Spread the filling onto dough.
Roll the dough lengthwise and seal the edges by pinching them together.
Form into a circle on the pan
Cut 4 to 5 slits in the top to release steam
Bake for 20 minutes
You can add buttercream frosting on top to make it even better.
You can dress up this ideas, you can pick different drinks, fruits, or even replace the flour with 1/2 white flour and 1/2 whole wheat. You can choose to add some celery, carrots, or anything that you have at home and the kids will eat. This is only an idea, meant to inspire you to create systems based on something that can be tweaked to work for you and your family.
I will continue to pray for you, for us, this is a hard time we are going thru, we feel helpless, we feel like is out of our control, so let's focus on what you can control, inside your house, the decisions you can still make, while the rest of the worlds fight this battle. Stay in control of what you can, and count your blessings, you can't see them, but they are right in front of you.
